Stuffed Peppers with Arugula, Sausage & Goat Cheese
3 bell peppers, halved lengthwise, seeded
2 tsp olive oil
2 sausage links of your choice (I used turkey), casings removed
4 oz. goat cheese
2 handfuls arugula
sea salt & freshly ground black pepper or red chile flakes, to taste
1 1/2 tbsp freshly grated Parmesan
Preheat oven to 400° and place bell peppers on baking sheet; set aside.
Heat olive oil in skillet over medium-high heat, add sausage and cook until brown. Crumble sausage with back of wooden spoon while cooking. Once sausage is browned, reduce heat to low and stir in arugula and goat cheese until arugula is wilted and cheese has melted. Add sea salt and pepper to taste.
Spoon filling into peppers and sprinkle with Parmesan. Bake 12-15 minutes or until peppers are slightly softened. Enjoy!
